Feed The Soul Friday - Gigi's Chocolate Chip Cookies

Gigi's Chocolate Chip Cookies

 

The Fixings:

2 Cups Flour

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

1/2 Teaspoon Baking Powder

1 Cup Rolled Oats

1 Teaspoon Vanilla Flavoring

1 Cup Nuts (I used Pecans in this recipe, which is what she always has used too)

1 Cup Shortening (I used Butter Flavored Crisco)

1 Cup White Sugar

1 Cup Brown Sugar

2 Eggs

1 Cup Chocolate Chips

 

 

Directions:

Cream the shortening and the sugars together.

Add the eggs and beat until light and fluffy.

Combine the flour, baking soda, baking powder, and salt together and add to the mixture. Mix well!

Lastly, add the vanilla, oats, chocolate chips, and nuts. Stir in till everything is nice and mixed well.

Drop from spoon onto cookie sheet. Bake at 350 degrees for 7-10 minutes.

 

I pulled this little recipe out from the vault at Gigi's for National Chocolate Chip Cookie Day! The little story behind this recipe is that it is over 50 years old! The card itself pictured was written down over 30 years ago. You can see how worn it is and her notes she made on it. This was a staple at our house growing up. One of my fondest memories of these cookies were our vacations. Money was tight growing up, so the days leading up to when we were supposed to leave for vacation, she would start baking snacks for the ride. This was definitely a favorite!
